Yummy Yummy Roast Chicken
Stuffing
(Do not cut or crush)
2 8" stalks of fresh basil
4 6" stems of marjoram, fresh
4 6" stems of fresh parsley
4 cloves garlic
1 small onion, cut as much as necessary to fit in the chicken
Prepare a chicken by removing the gibblets and any remaining feathers
and tucking the tips of the wings behind the shoulders. Stuff all
of the stuffing into the chicken cavity. Coat the chicken in
olive oil. Wrap in foil. Cook at 400F until a meat
thermometer reads 180F.
If desired, take the juices out of the bottom of the pan and put them
in a frying pan. Add two tbsp flour and about 2 cups water.
Add salt and pepper to taste. Boil until it reaches the desired
thickness.

Notes: Really tender
chicken. Very flavorful. The best way I've found to get the
flavors of the spices into the meat. makes a good gravy.
Fresh spices are very important.
