Wild rice stew

begin heating 1 c of dry wild rice in 8 c of water.  Add one 8 oz can of tomato paste (no salt), a heaping tablespoon salt, a heaping tablespoon ancho chili powder, 1/2 c red lentils, and 3-4 stilus of saffron.

In a separate pot brown 2 onions sliced thinly, 2 c root celery, 1 c frozen corn, and 2 c grated carrots in 1/2 c butter for 10 minutes.  Add to rice mix.

Cook until rice is softening, about 50 minutes.  Then let stand another 10 minutes while cooling.  During this time the rice will absorb more water so be careful not to over cook rice.

Wonderful with Czech dumplings, which are something heavy to complement all of the healthy stuff in the stew.
