Sopapillas 10/10
2 c flour
2 tsp baking powder
1/2 tsp salt
1/2 tsp sugar
2 tbsp solid vegetable shortening
3/4 c warm water
vegetable oil for deep frying
honey

in a food processor, process flour, salt, baking powder, and shortening until mixture resembles fine meal. with motor running pour water down feed tube and process until dough forms a ball. or combine dry ingredients in a bowl; cut in shortening until the mixture resembles fine crumbs. stir in water. turn dough onto a floured board and knead until smooth, about 1 minute
shape into a call; cover with a bowl and let rest 30 minutes. divide dough into 2 equal portions. with a rolling pin, roll each portion into a strip about 12Ó long, 2 1/2 inches wide, and 1/8 inch thick. cut each strip into 8 triangles
pour oil into an electric skillet or deep heavy pan to a depth of 1 1/2 inches
heat to 360F (180C). cook 2 pieces at a time, turning once, until puffed and golden brown, about two minutes. lift out with a slotted spoon and drain on paper twoels. serve hot with honey.
makes 16 sopapillas.
