Sesame chicken

1 bulb garlic, crushed or minced
1 tbsp minced ginger
1 tsp salt
1/2 c besan (gram flour)
1 tbsp soy sauce
1 tsp sesame seed oil
Water to make thick batter
4-5 chicken breasts, chopped into ~1" cubes
Marinate chicken in mixture above.

Fry chicken in oil until done, turning once.  About 8 min. total.  Toss with 1/4 c sesame seeds.

Sauce:
1/2 bulb garlic, crushed or minced
1 tbsp minced ginger
A couple of tbsp oil from chicken
3 tbsp corn starch
2 tbsp sugar
2 c broth
1 tsp cayenne
3 - 4 arbol peppers
2 tsp red pepper flakes
Rooster sauce to taste
1 tsp sesame seed oil

Sautee garlic and ginger about 5 minutes, until lightly browned.  Add some of the broth and the corn starch.  Mix thoroughly.  Add the remaining ingredients and cook until it thickens.

Toss chicken with sauce and one chopped up bunch of green onions.  Serve over rice or noodles.


We are not quite ready to brand this one "Christine's Sesame Chicken" - maybe after a few iterations it will follow.
