Notes on equipment
There are a few pieces of equipment which are not common in Europe. Sometimes I mentioned using them in these recipes.
Crock Pot A crock pot/
slow cooker is a large ceramic pot with a lid that plugs in. It
maintains a low temperature and traps moisture inside and heats evenly
on all sides, making slow cooking recipes very easy. It can be
substituted by a normal pot on top of a stove on low heat, but recipes
will need to be checked more frequently and extra water may need to be
added.
Food Processor (I may
have also called this a cuisinart.) This is a device for chopping
food coarsely and also works for kneading doughs. Doughs can just
be mixed by hand and foods that need to be chopped can either be done
by hand or by gently pulsing a blender on low speed.
