Latkes

1 pound potatoes, grated
1 1/2 onions, finely diced
1/3 c flour
2 eggs
1 tsp salt
1/2 tsp pepper

Combine ingredients and mix well.  Let sit about 5 minutes and mix again.

Heat about 1 cm oil in a frying pan to about 375F.  Drop about 1/3 c of the batter into the oil.  Cook until one side is well done (3-5 minutes) and flip.  Cook until the other side is done.  Drain, either on paper towels or on rack.

Notes:  Neither cooking times nor temperature are precise.  Do it by the seat of your pants.  Ondrej always adds marjoram.  You can play with the spices.  Onions are not traditional.
