Honey marshmallows

2 c sugar
2 tbsp honey
3/4 c water
mix together and boil until it reaches hard ball stage (roughly 260F)

2 packages (2 tbsp) unflavored gelatin
when you get the sugar mixture started, mix gelatin with 1/4 c water.  Allow to sit in a warm space and stir frequently to make sure all of the gelatin is dissolved.

Once the sugar mixture is ready, stir the gelatin mixture in completely

3 large egg whites
2 tsp vanilla extract/ mix of extracts
Beat egg whites until they form stiff peaks.  Beat in vanilla.  Beat in sugar mixture until thoroughly mixed

Prepare a 9"x9" pan by sprinkling a thick layer (1/8") of powdered sugar on the bottom and as much of the sides as you can get.  Pour the marshmallow mixture in the pan.  Let sit at least 8 hours.  cover top in powdered sugar and dump onto a cutting board.  cut into pieces.  Store coated in powdered sugar.

Um, yeah, the honey makes these absolutely devine.  You can play around with different kinds of honey and different extracts.
