Fried rice
3 eggs
2 chicken breasts
soy sauce
hot saucce (optional)
sesame seeds (optional)
1 onion
lots of chopped garlic (3-15 cloves, depending on taste)
4 cups cooked rice
olive oil
2 cups frozen mixed vegetables
sesame seed oil, if desired.
If rice needs to be cooked, start the rice first.
Preheat pan large enough for everything to medium heat.
Cut up chicken breasts into 1"x1" pieces. (Tenderizing them first
recommended.) Marinate in soy sauce with some hot sauce if
desired.
Fry eggs in olive oil until barely done. (Remember they will be cooked slightly more later.) Set aside.
Fry onions and garlic in the same pan (adding some more olive oil as needed) for 5 minutes. Set aside.
Fry frozen vegetables until hot. (Don't cook super long, just until they're warm enough to eat.) Set aside.
Fry chicken breasts in olive oil for 10 minutes, stirring
frequently. Add sesame seeds if desired. Check to make sure
the chicken is done.
Fry rice in oil (with 1 tbsp sesame seed oil if desired), adding soy
sauce to taste, cooking about 5 minutes or until rice is lightly
browned. While rice is browning, chop chicken into smaller pieces.
Mix everything together and fry 1-2 minutes.
