Ciabatta

1 1/4 c water (Substitute up to 1/4 c milk if desired)
1 tsp salt
2 tbsp olive oil
1 tbsp yeast
2 c flour

Mix with wooden spoon.  Dough will be sticky.  Let rice 1.5 hrs.  Beat down with wooden spoon.  Add about 1/2 c flour to get dough stiff enough to form a blob which roughly holds its shape.   Form into a  loaf on a very well floured pan.  Cover in flour and then in a towel.  Let rise 1 hr.  Cook at 375F for 25 minutes.
