Chicken Kabob burgers
1 pound ground chicken (A food processor works! whoo hoo!)
7 oz/200 g greek style (thick) yogurt, no flavoring
2 medium onions, finely diced
about 50 g achiote paste, crumbled up so it will mix in well
2 eggs
about 2 tsp salt
some pepper (1 tsp?)
mix
thoroughly. Let sit for about 1 hr to marinate. Cook on a
george foreman or similar style grill for about 5 minutes until cooked
through.
Ok yes I had trouble naming this one. It
mixes lots of styles and it's not the typical consistency used in a
kabob and it won't work if you grill it like a burger (too liquidy),
but it is good. You can get creative with the spices - the
achiote is really nice though and I would not recommend leaving it out.
Alternate version
3 ground chicken breasts, ground
1 yellow onion, finely diced
1 egg
about 50 g achiote paste
1 tsp salt
1 tsp ground black pepper
5 cloves garlic, finely diced
spices to taste (ex: 1 tsp cayenne, 2 tsp paprika)
Cook same as above. Doesn't need the marination.
Tip: Use your food processor. I put my blade for grating
cheese in and send the chicken, onion, achiote paste, and garlic all
through the grating blade.
